  • 3 ½ cups all-purpose flour
  • 1 packet 7g dry yeast
  • ¼ cup sugar
  • 1 teaspoon salt
  • 1 cup warm milk
  • 1 egg
  • ½ cup unsalted butter softened
  • 1 extra egg for egg wash
Alternative Ingredients:
  • Whole wheat flour for a healthier version
  • Plant-based butter and milk for a vegan alternative

Method
 

Step 1: Prepare the Dough
  1. In a bowl, mix warm milk, sugar, and yeast. Let it sit for 10 minutes until foamy.
  2. Add flour, salt, egg, and butter. Knead the dough for about 10 minutes until smooth.
  3. Cover the dough and let it rise for 1-2 hours, or until doubled in size.
Step 2: Roll and Shape the Gipfeli
  1. Roll out the dough into a large rectangle, about ¼ inch thick.
  2. Cut the dough into triangles using a sharp knife or pizza cutter.
  3. Roll each triangle from the base to the tip to form a crescent shape.
Step 3: Proofing the Dough
  1. Place the shaped Gipfeli on a baking sheet lined with parchment paper.
  2. Let them rise for another 30 minutes for a fluffier texture.
Step 4: Baking the Gipfeli
  1. Preheat the oven to 375°F (190°C).
  2. Brush each Gipfeli with a beaten egg for a golden finish.
  3. Bake for 15-18 minutes until golden brown.
  4. Let them cool slightly before serving.
